Avocado Salad

This is my favourite side to eat with so many meals, pair it with tofu, pair it with meat if you’re not veggie. It’s super nutritious and has great macros. This is super easy and probaby doesn’t require a whole post but it really is an easy way to get your veggies in without being bored.

Avocado Salad with an olive oil lemon dressing

Servings: 1 main side or 2 small sides

Ingredients:

  • 3 handfuls of kale
  • 1 whole avocado
  • Sprouted seeds for topping
  • Handful of olives

Ingredients for the dressing:

  • 1/2 a lemon (juiced)
  • 1tbsp olive oil or avocado oil
  • salt and pepper to taste
  • 1 tsp apple cider vinegar
  • 1 tsp powdered sweetner
  • 1 tbsp dijon mustard
  • 1 clove garlic minced

Instructions:

  1. Massage the kale with the dressing ingredients for a couple minutes (can use a spoon if worried about garlic hands)
  2. Add the avocado, spouts and olives
  3. Salt and pepper to taste (everything bagel seasoning would be great on the avocado)

Serve with tofu, meat, roasted veggies or some quinoa salad if you're not keto.
