Vegan Keto Paella

Servings: 2-4 (depending on additions used, meat, tofu etc)

Ingredients:

  • 1 courgette
  • one orange or green pepper
  • 200g cauliflower rice (2 frozen packs)
  • 200g shiritaki rice
  • couple sticks of celery
  • a few radishes (2/3)
  • a few scallions (2/3)
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic granules
  • 1 stock cube of choice or bullion (or fresh veg stock ) around 2 cups
  • 400g tinned tomatoes
  • 1/4 tsp cumin
  • 1/4 tsp onion granules
  • 3 tbsp oil

Protein additions: 1 block air fried tofu or equivalent meat alternative (not included in nutritional count)

Instructions:

  1. Heat a large pan on medium high and add 1tbs oil of choice
  2. Slice the courgette, radish, celery, scallions and pepper and add to the pan
  3. Fry for a couple minutes until soft
  4. Add the stock and the tomatoes and cook for another 5 minutes
  5. Add the cauliflower rice and the shiritaki rice and cook until the consistency is much drier (like paella ) 🥘
  6. Serve with favourite protein and optional top with saffron olive oil
