Vegan Keto Paella

Vegan Keto Paella

Servings: 2-4 (depending on additions used, meat, tofu etc)
Ingredients:
- 1 courgette
- one orange or green pepper
- 200g cauliflower rice (2 frozen packs)
- 200g shiritaki rice
- couple sticks of celery
- a few radishes (2/3)
- a few scallions (2/3)
- 1/2 tsp smoked paprika
- 1/4 tsp garlic granules
- 1 stock cube of choice or bullion (or fresh veg stock ) around 2 cups
- 400g tinned tomatoes
- 1/4 tsp cumin
- 1/4 tsp onion granules
- 3 tbsp oil
Protein additions: 1 block air fried tofu or equivalent meat alternative (not included in nutritional count)
Instructions:
- Heat a large pan on medium high and add 1tbs oil of choice
- Slice the courgette, radish, celery, scallions and pepper and add to the pan
- Fry for a couple minutes until soft
- Add the stock and the tomatoes and cook for another 5 minutes
- Add the cauliflower rice and the shiritaki rice and cook until the consistency is much drier (like paella ) 🥘
- Serve with favourite protein and optional top with saffron olive oil
