Burrito bowl - vegan, keto, dairy free

Hi everyone! Thought I would add a really good recipe for you all based on one of my favourite dishes, chilli con carne… without the carne!
Vegan Keto chipotle burrito bowl

Servings: 4
Ingredients:
- 4 low carb tortillas of choice
- 400g Meat free mince - meatless farm/ available soy mince (normally one pack)
- 1 can Soya beans
- 1/2 pepper
- 1 tin tomatoes
- 1 courgette
- 1 bunch cilantro
- 1 tsp paprika
- 1 tsp chilli powder
- 2 tsp cumin
- 1 tsp salt
- 2 chillis of choice
- 1 tsp garlic powder
- 2 spring onions (scallions)
- 1 vegetable stock cube - making around 200ml stock (or fresh)
- Soy yogurt for topping
- Vegan cheese for topping
- 1 bunch cilantro for topping
- Lettuce to top
- Favourite salsa or use this recipe I like
For the cilantro lime rice (Cauliflour and barenaked are around the same net carbs)
- 2 packs cauliflower rice or konjac rice ( bare naked rice)
- 1/2 lime
- Chopped cilantro
- Pinch of salt to taste
Optional lime zest
For the guacamole - or use my cauliflour guac
- 2 avocados
- 1 bunch cilantro
- 1/2 lime
- 1 pinch of salt
- Optional pepper flakes
Alternative toppings

Instructions:
Preheat oven to 180 c and turn hob to medium high.
Fry the mince in the pan and while this is cooking Chop the chilis, courgette, pepper and scallions and then add to pan
Cook the mixture for 10 minutes until some colour on the mince and the vegetables have softened. Add the spices and cook for another minute before adding the tinned tomatoes and the stock
Let cook for 10 minutes until a thick sauce has been made (if this hasn’t happened cook for another 10 minutes)
Add tortilla into an overproof bowl or tortilla mould (like I have) and cook for 10 minutes until crispy and brown
Assemble as a normal chipotle bowl would be - rice, meat, salsa, cheese, sour cream, guac
Can do this without the tortilla bowl but this is a great way to do easy meal prep meals by increasing batch size and is a family favourite in our house.
