Tofu Toast with Smashed Avocado

Hi guys! Hope everyone is ready for this, tofu toast has been a fan favourite and I’m just getting round to doing an official recipe. Here it is!

Tofu toast with smashed avocado

  • prep time: 5 minutes
  • cook time: 30 minutes
  • total time: 35 minutes

Servings: 2

Ingredients:

  • 1 large avocado
  • 1 pack tofu (mine is 240g and prefered brand is tofoo)
  • 2tbsp oil of choice (I recommend olive or avocado)
  • 1 tsp chilli flakes (optional)
  • 1 tsp garlic
  • Lemon juice to taste
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 180C/350F. Drain and press tofu for 20 minutes (10 in a pinch)
  2. Halve and scoop avocados and mash with salt, pepper, garlic and chilli
  3. Slice the tofu into 1 inch slices (lengthways) to make toast shapes and brush with oil, salt and pepper. Bake for 30-40 mins but turn after 20 mins. Different ovens will perform differently
  4. Tofu should be crispy, assemble and top with some extra pepper and lemon juice
