Sushi on keto, can it be done? 

Sushi was one of my favourite things to eat pre-keto and pre-vegan. Those on a non vegan keto diet can of course have sashimi out at restaurants but DIY keto sushi is so easy to do! There are 2 main ways to replace sushi rice on keto, which we’ll go through below.

Rice is normally a no-no on keto due to the number of net carbs and the insulin and glucose spikes that happen when you eat regular rice, this won’t happen with these recipes! Keto sushi rice, yes please.

Is rice keto?

Rice is not keto, regular white rice is so packed with starch and sugar (yes even the whole grain)

Using Cauliflower rice: 

To replace the rice you can use cauliflower rice + 1tbsp (non) dairy cream cheese and adjust vinegar, soy sauce/ coconut aminos and erythritol to taste. I like the supermarket soy based brands as I find they don’t have that unpleasant coconut sour aftertaste.

Using Konjac rice:

You can also replace rice for sushi on keto by using konjac based rice

 (miracle noodles or shiritaki noodle brands do these and bare naked rice for people on vegan keto in the UK)

You do the same as above with the cauliflower rice

The secret ingredient to no falling apart rice: xantham gum

Xantham gum will make sure that your rice doesn’t fall apart when rolling your sushi.

Favourite fillings for sushi:

Crispy tofu

Avocado

Vegan tuna mayo

Kimchi (I know it’s Korean but still tasty)

Crisp veggies - I like spring onion, cucumber, and cabbage (if you have the carbs then add carrot because it’s delicious)

Is tofu keto?

Absolutely, Tofu is definitely keto and super low in carbs, high in protein. 

This is a dairy free keto recipe, can it be made with fish and regular cream cheese? 

Yes, definitely. Use regular cream cheese, add in your fave fish and you’re away!

What can I order out at a sushi restaurant on keto?

Order ramen no noodles, sashimi (if you’re regular keto) or even fried tofu for a treat!

Is this recipe budget-friendly? 

Absolutely, stick with ricing your own cauliflower, make the fillings at home and save yourself big $$$ by making something satisfying at home!
